Sweetener systems and what sugar-free means
Sugar does two jobs in a formula. It sweetens, and it fills space. Take it out and you have two holes, while a high-intensity sweetener only fills one. A sugar-free reformulation is really a bulking exercise with a sweetener blend on top, plus a defined nutrient claim you have to meet by laboratory analysis.
Sugar-free is a defined claim
Sugar-free is a regulated nutrient claim, not a marketing phrase. The Codex-aligned threshold is no more than 0.5 g of total sugars per 100 g or 100 ml, proven by analysis. No added sugar is a different claim and permits naturally occurring sugars.
Reb A versus Reb M
Steviol glycosides are not interchangeable. Rebaudioside A is cheap and leaves a liquorice bitterness at the back of the palate. Rebaudioside M, made by bioconversion, sits much closer to sucrose and costs several times more. Monk fruit masks most of the tail.
Bulking agents
The volume sugar used to occupy comes back as erythritol, inulin, polydextrose or resistant dextrin. Fibre bulkers earn a second claim on the panel. Erythritol brings a cooling mouthfeel that flatters mint and fights chocolate.
Polyol tolerance
Sugar alcohols are laxative in quantity. Sorbitol and maltitol generate the most complaints, while erythritol is largely absorbed and tolerated better. Tolerance is cumulative across the day, so a chewable eaten hourly needs a tighter budget than one sachet.
Heat and pH stability
Aspartame degrades with heat and does not belong in a hot-brew sachet or a baked product. Sucralose, acesulfame K and steviol glycosides hold up through processing. Match the sweetener to the process, not to the trend.
Formats
Format sets the sweetener system. Chewable tablets need a directly compressible base such as isomalt, mannitol or sorbitol, which supplies both the bulk and part of the sweetness. Sugar-free gummies are built on maltitol or isomalt syrup and set differently in pectin than in gelatin. Tablet and capsule runs can begin at 100 boxes.
Halal & sourcing
High-intensity sweeteners are synthetic or fermented and generally straightforward. The halal file here usually turns on flavours, which are commonly carried in ethanol or propylene glycol, and on the gelatin if the format is a gummy or a softgel.
