Gelling system, pH control and collagen loading

What makes a jelly stick work

A jelly stick is roughly 80 per cent water held in a gel, hot-filled and sealed. That makes it the easiest format for a customer to consume and one of the harder ones to keep stable. Shelf life is won on pH, water activity and fill temperature, not on preservative alone.

Gelling system

Konjac glucomannan blended with carrageenan gives the cohesive, suckable texture of a Korean-style jelly stick and holds its shape in tropical warehouses. Gelatin melts near body temperature and will slump in an uncooled container. Agar sets brittle and fractures in the pouch.

pH decides the process

Hold the fill below pH 4.6 and hot-fill at 85 to 90 degrees is enough. Above pH 4.6 the product needs full retort sterilisation, which changes the equipment, the pouch laminate and the cost. Fruit acids are usually the cheapest way down.

Collagen loading

Solids cap the dose. At roughly 80 per cent water, a 15 to 20 g stick holds 3 to 4 g of solids, shared with sweetener and gum. That fits 2,500 mg of collagen. 5,000 mg and up needs a 30 to 50 g pouch.

Peptide molecular weight

Hydrolysed collagen at 1,000 to 5,000 daltons stays dissolved through the gel set. Longer chains raise viscosity and gel out, so the stick sets grainy and fills unevenly. Specify the molecular weight, not just the milligrams.

What the hot fill kills

Probiotics, digestive enzymes and most live cultures do not survive an 85-degree fill. Vitamin C and polyphenol-rich fruit extracts survive but darken over shelf life. Heat-stable actives, minerals and peptides are the safe candidates.

Texture and safety spec

Firm konjac jellies have a choking history with children and the elderly. Texture is therefore specified deliberately: soft enough to break under tongue pressure, with a spout width and stick length chosen to match. This belongs in the brief, not in a complaint later.

Formats

Jelly sticks suit beauty collagen, kids' supplements and anything sold on the pleasure of taking it. The trade-off is weight: a 20 g stick is mostly water, so freight per active milligram is far higher than a capsule. Most brands run jelly as the retail hero and a dry format alongside.

Halal & sourcing

Two checkpoints in a jelly. The gelling agent, where konjac and carrageenan are plant and seaweed derived while gelatin is not. And the collagen, where marine collagen sidesteps the issue and bovine collagen needs certification traced to slaughter.
